The earlies 'modern' style anchor design I have found is depicted on the 5th and 6th century B.C. coins of Apollonia Pontika (modern day Sozopol in Bulgaria on the Black Sea). Just a few centuries before, in the Mycenaen era, large stones were used as anchors. These, too, have been found in the Aegean and Black seas, and in the water route between them.

There are several references to anchors in "Greek Oared Ships 900-322 B.C." by J.S. Morrison and R.T. Williams, Cambridge University Press, 1968.
